Monkey Xmas favorite recipes

These are the basics we serve at Monkey Xmas. If you want to make any of these and it's just one or two of you, we recommend doing a 1/4 of the recipe.

​Mexican Roll-ups

1 cup sour cream
8 oz. softened cream cheese
1 4 oz can chopped green chilies, drained
1 4 oz can chopped ripe olives
1 cup grated cheddar cheese
1/4 cup finely minced onion
1 tsp garlic salt
12 flour tortillas

Blend the sour cream and cream cheese until smooth. Add the next six ingredients and mix well. If your tortillas are not flexible enough to roll easily, wrap them in foil and warm them in a 350 degree oven for five minutes. Spread cheese mixture on tortillas, roll up and place seam side down in a glass dish. Continue until all the mix and tortillas are used. Chill for several hours until firm. slice in 1/2 inch sections and serve.

Dried Beef Pickle Roll Ups

​1 jar dried beef
1 large package cream cheese
dill pickles (cut in 2" strips)

Pour boiling water over the dried beef and let stand for about a minute; drain off water. On each piece of beef, place a chunk of cream cheese and a pickle strip. Roll up. Serve.

Chex Party Mix

HEY! You should really just buy a bag of this. That's what we do. But if you're all into authenticity and "homemadeness," go for it!
2 cups Corn Chex
2 cups Rice Chex
2 cups Wheat Chex
6 T. butter
1t. seasoned salt
4 t. Worcestershire sauce
3/4 c. pretzel sticks, broken in half

​Preheat oven to 250-degrees. Heat butter in a large, shallow baking pan in oven until melted. Remove. Stir in seasoned salt and Worcestershire sauce. Add Chex and nuts. Mix until all pieces are coated. Heat in oven 45 minutes. Stir every 15 minutes. Spread on absorbent paper to cool (a large brown grocery store bag works well).


Note: Chex Party Mix can be frozen so make a double batch. Thaw at room temperature in the container in which it was stored.

Sparkle Punch

We haven't made this punch for Monkey Xmas for quite some time, but it's still pretty good. You know. If you like sugar.

1 cup water
2/3 cup grenadine syrup
1 6 oz can frozen lemonade concentrate, thawed
2 12 oz cans black cherry soda (chilled)
1 28 oz bottle (3 1/2 cups) carbonated water (or use Sprite or 7-Up)
Lime slices
Maraschino cherries
Fresh ​Mint
In a bowl or pitcher, combine water, syrup and lemon concentrate. Slowly pour cherry soda and carbonated water down the side of bowl or pitcher. Add ice cubes. Garnish each serving with lime slices and maraschino cherry and a bit of mint. Makes 9 cups.

Spinach Dip

​We've served many variations of this dip, but this is the basic version we build from. Make yourself a bread bowl and you're all set.
1 package Knorr's homestyle vegetable soup mix
1 cup sour cream
1 cup mayonnaise
1 10 oz. package frozen chopped spinach
3 small green onions, finely chopped

Thaw spinach. Rinse, drain and squeeze out excess liquid. Combine all the above ingredients. Mix thoroughly. Chill 3 hours, then serve. Makes about 2-1/2 cups.

Guacamole
You probably have your own, better recipe for this. But, hey. Maybe you don't. Here you go.

Mash 2 pitted and peeled avocados with a fork. Stir in 1 TBS grated onion, 1/4 tsp chili powder. If desired, add finely chopped tomatoes and a little garlic powder. Salt and pepper to taste. 
Notes:  Some people swear by adding a bit of sour cream. Others put garlic chunks. Paprika. Cilantro. Bacon. Put whatever tastes good to you in there.

JP's Plate o' Bacon

JP wondered what would happen if you brought a plate of bacon to a party.  You know what happens? People eat the bacon.




​1 package of bacon (pork or turkey)

Over low heat, place bacon in a 12" flat-bottomed frying pan. If you're going for turkey bacon, make sure to add a little olive oil.  Using tongs, flip bacon occasionally. When bacon is crispy, remove and place on paper towel to drain grease.

Queso
No need to get fancy here. This is your standard Velveeta / Ro*Tel Queso, just like the recipe on the box.
1 16 oz block of Velveeta
1 10 oz can of Ro*Tel Tomatoes and Green Chilies

Cube the cheese. Throw it and the Ro*Tel in a crock pot on high. If you're in a hurry, throw it in the microwave for 5 minutes, stir after 3.
